From My Counter to Yours | Quick Curry Lentils

During this Pandemic, most of us are cooking from home, maybe more than before. These lentils are easy to make and a hit. I have even made them before at my office.
- 2 Tbls Olive Oil
- 1 1/2 Cups Diced Carrots
- 1 1/2 Cups Diced Celery
- 1 Large Diced Onion
- 2 Tbls Red Curry Powder/Paste
- Salt, Pepper, Garlic Powder
- 1 Package (5oz) Chopped Pancetta
Sautee until veggies are tender then add:
- 2 Cups Lentils
- 4 Cups Veggie Broth (or Chicken broth)
- 1 Can Coconut Cream Milk
- 4 Cups Water
- 2 Bay Leaves
- simmer until done (about 2 hours)
- Serve over Rice and top with Chopped Cilantro
Tip: To cook in a crockpot, follow instructions but cook on high for 4 hours. This is what I do at the office for an easy, hearty, meal.
