From My Counter to Yours | Quick Curry Lentils

During this Pandemic, most of us are cooking from home, maybe more than before. These lentils are easy to make and a hit. I have even made them before at my office.

  • 2 Tbls Olive Oil
  • 1 1/2 Cups Diced Carrots
  • 1 1/2 Cups Diced Celery
  • 1 Large Diced Onion
  • 2 Tbls Red Curry Powder/Paste
  • Salt, Pepper, Garlic Powder
  • 1 Package (5oz) Chopped Pancetta

Sautee until veggies are tender then add:

  • 2 Cups Lentils
  • 4 Cups Veggie Broth (or Chicken broth)
  • 1 Can Coconut Cream Milk
  • 4 Cups Water
  •  2 Bay Leaves
  • simmer until done (about 2 hours)
  • Serve over Rice and top with Chopped Cilantro

Tip: To cook in a crockpot, follow instructions but cook on high for 4 hours. This is what I do at the office for an easy, hearty, meal.
